½ sweet onion, diced
1 red bell pepper, diced
2 tsp minced garlic
1 lb ground beef
3 tbsp chili seasoning
6 oz tomato paste
28 oz canned petite diced tomatoes
MASA Chips Cobanero, for serving
Cheddar cheese, for topping
Sliced green onions, for topping
Sour cream, for topping
Salt and pepper, to taste
Heat a drizzle of olive oil in a large pot over medium heat.
Add diced onion and red bell pepper; cook until softened and the onions are translucent.
Stir in minced garlic and cook for another minute until fragrant.
Add ground beef, breaking it up with a spatula as it cooks.
Once the beef is browned, mix in chili seasoning to coat evenly.
Stir in tomato paste, then slowly pour in diced tomatoes. Mix to combine.
Season with salt and pepper to taste.
Reduce heat to low and let simmer for 20–30 minutes, stirring occasionally.
When ready to serve, prepare your toppings: cheese, green onions, and sour cream.
Serve the chili warm in bowls and scoop it up with MASA Chips for the perfect crunch.
